Detect fraudulent food

Food can be considered fraudulent when a product is dilluted, mislabeled, tampered with or substituted with a different product. It is a global issue where both consumers and companies pay a high price for inferior and mislabeled products. Some of the often targeted segments include olive oil, fish, coffee, honey, meat, spices and tea. Detecting food fraud is hard but using hyperspectral image analysis it is possible to quickly detect chemical anomalies and foreign substances not visible to the eye. This makes it a powerful tool to discover fraudulent products and increase food safety.
